Banana Bread

Ingredients

  • 150gr self-rising flour
  • or 150gr general purpose flour with 1½ teaspoon baking powder
  • 110gr granulated sugar
  • 100gr melted unsalted butter
  • 3 large egg
  • 3 table spoons of lemon juice
  • 190gr (~2) of very ripe bananas
  • ½ teaspoon ground cinnamon
  • 1 pinch of salt
  • ½ teaspoon vanilla essence
  • 1 teaspon of baking soda
  • 55Gr frozen or fresh raspberries

Preparation

Pre-heat your oven at 180C.

In a cake dish, grease the inside using some butter and layer a bit of flour.

In a small bowl, wisk the eggs into an omelette and the add the vanilla essence.

Peal 2 bananas and with a fork mash them until you get a nice puree. Add the cinamon. Mix until you get a creamy texture.

In a large salad bowl, put the flour, the baking powder, salt and sugar. Form a pit at the center and put the eggs and melted butter.

Mix until you get a consistent paste and until no flour remains visible. Add the mashed bananas and mix until you get a homogenous batter.

When everything is mixed, add the lemon juice and mix thoroughly. Then add the raspberries and gently stir to combine.

Cooking

Pre-heat your oven at 180C.

Pour batter into prepared pan and bake for 1 hour to 1 hour 10 minutes at 170C, until a toothpick or knife is inserted in the center comes out clean.

Set aside to cool on a rack for 30 minutes.

Remove bread from pan, invert onto rack and cool completely before slicing.
